to North Carolina.
WHAT YOU’LL LIKE: The Monkfish have a lean, meaty texture with a sweet, rich flavor and are wrapped with prosciutto and topped with wild mushrooms
WHAT TO EAT WITH IT: Wild Wild Monkfish is best served with a fresh seasonal vegetable and garlic whipped potatoes
AND THE SAUCE: The fish is served with one of our signature sauces: Warm Mango Salsa, Lime Tomato Garlic, Lemon Butter or Pan Asian

QUOTABLE QUIP: The wide mouth and strong jaw of the monkfish allow it to eat a variety of other fishes, which result in its sweet taste. Monkfish can even swallow prey almost as large as itself!
FABULOUS FRUIT TALE: Only the tail of the monkfish is eaten. These tail “tenderloins” often weight up to ten pounds.
